Banana Fritters

Ingredients

  • 55g Cake Flour
  • 25g Caster Sugar
  • 1 Egg, beaten
  • 60ml Milk
  • 4 Bananas – approx 600g
  • Vegetable Oil for frying

Method:

  1. Mix the flour, sugar, egg and milk together to make a smooth batter. Leave to rest for 1 hour.
  2. Slice each banana in half lengthways, then across into chunks about 7cm long.
  3. Dip the banana pieces into the batter and shallow-fry in hot oil for a few minutes or until golden brown all over. Drain quickly on paper towel and serve warm with vanilla ice cream.
